  1. Purée and strain watermelon to make 1 1/2 quarts juice,chill
  2. Make simple syrup by boiling sugar in water for 1 minute then simmer for 5 minutes, remove from heat add in lemon juice and allow it to cool.
  3. After syrup has cooled to room temp combine with chilled watermelon juice.
  4. Pour into ice cream maker and freeze according to manufacturer's instructions.
  5. You can also make this in the freezer if you don't have an ice cream maker. Just pour the mixture into a glass or metal pan (make sure not to over fill as it will expand as it freezes!) every couple of hours scrape it from the top down, (we use a fork) it'll have the texture of a snow cone. Do this a couple of times. After the second time put it in a freezer safe container with a lid. Should keep in the freezer for a few months.
