- Get Tofu cubes

- Marinate chicken meat with 2 tbsp soy sauce, 1 tsp sesame oil, 1 tsp sugar and some white pepper
- Marinate dehydrated shitake mushroom with soy sauce, sugar and sesame oil.
- Fry the white tofu till brown and set aside. Stir fry chicken meat till brown and set aside. Sitr fry the all the other ingredients till aromatic.
- Add in sauce and chicken meat stir for a while and add in water from the soaked mushroom and shrimp. Add in more water if you want to cover the meat to braise 30 minutes. Add the tofu together. Add in red chilli if you like spicy and sprinkle some spring onions on top and serve.
- Adjust taste with salt or soy sauce as braised the pot for after 20 minutes to make sure the taste is nice.
- The chicken meat now should be nice and tender, the mushroom and tofu absorb the taste of the gravy and the gravy taste umami and a hint of the small shrimp aroma.
